2 Lbs. Fresh Perch

2 tablespoons fresh lemon juice

½ cup grated parmesan cheese

¼ cup butter, softened

3 tablespoons mayonnaise

1 dash hot pepper sauce (e.g. Tabasco)

Salt and Pepper to taste


Preheat oven to 400 degrees.

Place the perch fillets on a greased baking tray. Brush with lemon juice. In a small bowl, stir together parmesan cheese, butter, mayonnaise, hot pepper sauce, salt and pepper. Set aside.

Bake the fillets at 400 degrees for 12 minutes or until they can be flaked with a fork. Remove from the oven, set oven to broil and spread cheese mixture on top of fillets.

Return fillets to the oven broiler for 2 minutes or until topping is browned and bubbly.
