Wild Caught, Product of Iceland.
4 Fresh Cod Loins 6 oz. each
4 Tbsp. Mayonnaise
3/4 Cup Quick Oats
1/3 Cup Bread Crumbs
1/3 Cup Grated Parmesan
1 Tbsp. Fresh Chives
1/2 Tsp. Grated Lemon Rind
1 Tsp. Lemon Juice
2 Tsp. Parsley Flakes
1/2 Tsp. Salt
1/2 Tsp. Ground Pepper
Pre-heat oven to 350. Line baking sheet with parchment paper or silicone liner. Place fresh cod loins on baking sheet.
In a bowl mix together oats, bread crumbs, Parmesan, chives, parsley, salt and pepper. Mix thoroughly.
In a separate bowl, add mayonnaise then add lemon rind and juice. Stir.
Brush tops of fish with generous amounts of the mayonnaise mixture. The mayonnaise mixture combines with the coating of dry ingredients and thickens, creating texture.
Bake for 18 to 20 minutes or until fish flakes whenforked.
